Place is read before it is interpreted.

Light

The room and menu follow the evening. Plates begin pale and vivid, then grow warmer and deeper as daylight leaves the pavilion.

Plant

Leaves, flowers, stems and seeds are treated as complete ingredients, not finishing gestures. The garden sets the kitchen’s first rhythm.

Coast

Cold-water fish, shellfish and sea herbs bring a precise mineral line through the tasting sequence.

Preservation & technique

Keep the season without fixing it in place.

Fermentation, drying and steeping allow a harvest to reappear later with a changed voice. These methods are used quietly: acidity is held in reserve, smoke remains a trace and texture is altered only when it clarifies the ingredient.

Technique should be felt as precision and ease, never performed as spectacle.
