The Saltmere idea
Saltmere imagines a small dining room at the meeting point of marsh, field and open water — a place where the weather sets the pace and the cooking keeps its footing close to shore.

Food from the waterline
This fictional menu begins with the landscape: samphire and sea beet, brown crab, barley, orchard fruit and fish landed along the East Anglian coast.
Smoke, brine and patient fermentation give those ingredients structure without taking away their clarity. Each imagined course is spare, generous and rooted in its season.
