A late-summer sequence moving from the creek edge to the kitchen garden and open fire.

    Warm broth, sea beet and smoked coastal herbs

  2. Brown crab

    Gooseberry, cucumber and flowering coriander

  3. Barley

    Charred leek, cultured cream and sea purslane

  4. Turbot

    Samphire, roast shellfish butter and green fennel

    Brown crab tart available

  5. Salt-marsh lamb

    Runner beans, turnip and marsh mint

  6. Gooseberry

    Woodruff, buttermilk and toasted barley

Coast and county

Close to where the land meets the sea.

The menu begins with the North Norfolk coast: shellfish from local boats, salt-marsh grazing, field vegetables and herbs that thrive in wind and brackish ground. We cook simply enough for each source to remain present on the plate.
